Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan, lining it with parchment paper.
- Combine the grated carrots, granulated sugar, and vegetable oil in a large bowl until fully mixed.
- Add the eggs one at a time, incorporating each before adding the next.
- Mix the flour, baking powder, baking soda, ground cinnamon, and salt in a separate bowl, then gradually add to the carrot mixture.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool the bars in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Make the frosting by beating the cream cheese and softened butter until smooth, then mixing in powdered sugar and vanilla until fluffy.
- Frost the completely cooled cake bars evenly with the cream cheese frosting.
- Cut into squares or rectangles for serving.
Notes
For enhanced flavor, toast the grated carrots lightly. You can prepare the batter in advance or use an air fryer for quicker baking.
