- 2 sleeves Ritz crackers
- 1 cup unsalted butter
- 1 cup packed brown sugar
- ¼ cup light corn syrup
- 1 teaspoon vanilla extract
- ¾–1 cup chopped salted peanuts
Instructions
- Prep the baking sheet: Line a large baking sheet with parchment paper. Arrange the Ritz crackers in a single layer.
- Melt the butter: In a medium saucepan over medium heat, melt the butter completely while stirring.
- Create the caramel: Stir in the brown sugar and corn syrup, mixing until smooth. Bring to a gentle boil, stirring constantly.
- Add vanilla: Remove from heat and stir in vanilla extract.
- Spoon onto crackers: Carefully drizzle about 1 tablespoon of caramel onto each cracker.
- Top with peanuts: Immediately sprinkle the chopped peanuts over the warm caramel.
- Cool completely: Allow the crackers to cool at room temperature until the caramel is firm.
Notes
Store in an airtight container at room temperature for up to a week. Can be frozen for longer storage.
