- Caramel sauce for drizzling
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing until well incorporated.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Prepare the cheesecake filling by beating together cream cheese, 1/4 cup sugar, 1 egg, and 1 teaspoon vanilla until smooth.
- Scoop a tablespoon of cookie dough onto the baking sheet, create an indent in the center, and fill it with cheesecake mixture.
- Top with another tablespoon of dough and space your cookies two inches apart.
- Bake for 12-15 minutes or until lightly golden.
- Cool for a few minutes before drizzling with warm caramel sauce.
Notes
Chill the dough overnight for better flavor and texture. You can also freeze unbaked dough for future cravings.
