Description

Delicious cookies that combine chewy cookie texture with rich, creamy cheesecake filling and a drizzle of caramel.


Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 egg (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • Caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing until well incorporated.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Prepare the cheesecake filling by beating together cream cheese, 1/4 cup sugar, 1 egg, and 1 teaspoon vanilla until smooth.
  7. Scoop a tablespoon of cookie dough onto the baking sheet, create an indent in the center, and fill it with cheesecake mixture.
  8. Top with another tablespoon of dough and space your cookies two inches apart.
  9. Bake for 12-15 minutes or until lightly golden.
  10. Cool for a few minutes before drizzling with warm caramel sauce.

Notes

Chill the dough overnight for better flavor and texture. You can also freeze unbaked dough for future cravings.
