Description

A refreshing and vibrant salad that bursts with the flavors of the Mediterranean, featuring crisp romaine, juicy cherry tomatoes, tangy feta, and a creamy dressing.


Ingredients

  • 1 head Romaine Lettuce
  • 1 cup Cherry Tomatoes
  • 1 large Cucumber
  • 1/2 cup Pepperoncini
  • 1/4 cup Red Onion
  • 1/2 cup Kalamata Olives
  • 1/2 cup Feta Cheese
  • 1 cup Croutons
  • 1/2 cup Greek Yogurt
  • 1/4 cup Mayonnaise
  • 2 tablespoons Red Wine Vinegar
  • 2 tablespoons Fresh Lemon Juice
  • 1/4 cup Extra Virgin Olive Oil
  • 1 teaspoon Honey
  • 1 tablespoon Herbs & Spices
  • 1/4 cup Parmesan Cheese (Optional)

Instructions

  1. Begin by rinsing and drying the romaine lettuce thoroughly. Chop into bite-sized pieces and toss into a large mixing bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Slice the cucumber into half-moons and introduce them to the mix, followed by the tangy pepperoncini and thinly sliced red onion.
  4. Add the Kalamata olives, crumbled feta, and croutons.
  5. In a separate bowl, combine the Greek yogurt, mayonnaise, red wine vinegar, lemon juice, olive oil, honey, and herbs. Whisk until smooth.
  6. Drizzle the dressing over the salad and toss gently to coat.
  7. Serve immediately, or chill in the fridge for a while.

Notes

For the best crunch, add croutons just before serving. Use fresh vegetables for vibrant flavor.
