- 1 head Romaine Lettuce
- 1 cup Cherry Tomatoes
- 1 large Cucumber
- 1/2 cup Pepperoncini
- 1/4 cup Red Onion
- 1/2 cup Kalamata Olives
- 1/2 cup Feta Cheese
- 1 cup Croutons
- 1/2 cup Greek Yogurt
- 1/4 cup Mayonnaise
- 2 tablespoons Red Wine Vinegar
- 2 tablespoons Fresh Lemon Juice
- 1/4 cup Extra Virgin Olive Oil
- 1 teaspoon Honey
- 1 tablespoon Herbs & Spices
- 1/4 cup Parmesan Cheese (Optional)
Instructions
- Begin by rinsing and drying the romaine lettuce thoroughly. Chop into bite-sized pieces and toss into a large mixing bowl.
- Halve the cherry tomatoes and add them to the bowl.
- Slice the cucumber into half-moons and introduce them to the mix, followed by the tangy pepperoncini and thinly sliced red onion.
- Add the Kalamata olives, crumbled feta, and croutons.
- In a separate bowl, combine the Greek yogurt, mayonnaise, red wine vinegar, lemon juice, olive oil, honey, and herbs. Whisk until smooth.
- Drizzle the dressing over the salad and toss gently to coat.
- Serve immediately, or chill in the fridge for a while.
Notes
For the best crunch, add croutons just before serving. Use fresh vegetables for vibrant flavor.
