- 2 lb boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1/2 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Prepare your chicken: Rinse and pat dry the chicken breasts. Trim off any excess fat as you prefer.
- Chop the aromatics: Dice the onion and mince the garlic.
- Layer the ingredients: In your slow cooker, place the chicken breasts at the bottom. Add the chopped onion and garlic on top.
- Mix your sauce: In a bowl, combine the BBQ sauce and chicken broth, mixing until well blended. Pour this mixture over the chicken.
- Spice it up: Season with paprika, salt, and black pepper. Gently stir to distribute the spices.
- Cook: For a slow cooker, set on low for 360-480 minutes or high for 180-240 minutes. If using an Instant Pot, set it to manual for 15 minutes with a natural pressure release.
- Shred the chicken: Once cooked, use two forks to shred the chicken right in the cooker.
- Serve: Pile high on toasted buns, sprinkle with additional coleslaw, or serve over rice.
Notes
For meal prep, prepare the chicken a day ahead and store it. This dish also works in the oven; bake at 300°F for 120-150 minutes.
