Description

Indulgent Banana Cinnamon Rolls infused with sweet bananas and warm cinnamon, topped with a delightful icing.

Ingredients

Scale
  • 1 cup mashed ripe bananas (approximately 2 large bananas)
  • 2 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup warm milk (110°F)
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 tablespoons unsalted butter, softened (for filling)
  • 1/2 cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 1 cup powdered sugar (for icing)
  • 2 to 3 tablespoons milk (for icing)

Instructions

  1. Activate Yeast: In a large mixing bowl, whisk together warm milk, yeast, and a pinch of granulated sugar. Allow it to rest for about 5 minutes until the mixture becomes foamy.
  2. Combine Wet Ingredients: Add the mashed bananas, melted butter, egg, remaining sugar, and salt. Stir until smooth.
  3. Form Dough: Gradually incorporate flour until a soft, slightly sticky dough forms. Knead for about 5 minutes until smooth.
  4. First Rise: Place dough in a greased bowl, cover, and let it rise in a warm location until doubled in volume, about 60 minutes.
  5. Shape Rolls: Punch down the dough, roll it into a rectangle, and spread softened butter with brown sugar and cinnamon.
  6. Roll and Slice: Roll tightly into a log and slice into 9 equal rolls.
  7. Final Rise: Place rolls in a greased baking dish, cover, and let rise for 20 minutes.
  8. Bake: Preheat oven to 350°F, and bake for about 25 minutes until golden brown.
  9. Prepare Icing: Whisk powdered sugar with milk until smooth.
  10. Finish and Serve: Drizzle icing over warm rolls and enjoy!

Notes

Make-ahead: Prepare dough a day in advance and refrigerate after the first rise.
