Description

Soft, fluffy banana cinnamon rolls with a gooey filling and sweet icing, perfect for brunch or a cozy dessert.

Ingredients

Scale
  • 1 cup mashed ripe bananas (approximately 2 large bananas)
  • 2 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup warm milk (110°F)
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 tablespoons unsalted butter, softened (for filling)
  • 1/2 cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 1 cup powdered sugar (for icing)
  • 2 to 3 tablespoons milk (for icing)

Instructions

  1. Activate yeast: In a large mixing bowl, whisk together warm milk, yeast, and a pinch of granulated sugar. Allow to rest for 5 minutes until the mixture becomes foamy.
  2. Combine wet ingredients: Add mashed bananas, melted butter, egg, granulated sugar, and salt to the yeast mixture. Stir until thoroughly combined.
  3. Form dough: Gradually incorporate flour until a soft, slightly sticky dough forms. Knead gently for about 5 minutes until smooth and elastic.
  4. First rise: Place the dough in a greased bowl, cover, and allow to rise until doubled in volume, approximately 1 hour.
  5. Shape rolls: Punch down dough and roll it out into a rectangle. Spread softened butter, then sprinkle with brown sugar and cinnamon.
  6. Roll and slice: Roll the dough tightly into a log and slice into 9 equal rolls.
  7. Final rise: Arrange the rolls in a greased baking dish and allow to rise for another 20 minutes.
  8. Bake: Bake for 25 minutes until golden brown.
  9. Prepare icing: Whisk together powdered sugar and milk until smooth.
  10. Finish and serve: Drizzle the icing over warm rolls before serving.

Notes

Make-ahead: Prepare the dough the night before and refrigerate it. You can also customize with nuts or chocolate chips.
