Deliciously crispy quesadillas filled with smoky bacon, fluffy scrambled eggs, and melted cheese, perfect for breakfast or brunch.

- 4 large flour tortillas
- 6 slices of bacon
- 4 large eggs
- 1 cup of shredded cheese (cheddar or Monterey Jack)
- Salt and pepper to taste
- Butter or cooking spray for frying
Instructions
- Cook the bacon: Heat your skillet over medium heat and add the bacon strips. Cook until they are golden and crispy, about 4–5 minutes. Remove them and let them drain on paper towels.
- Scramble the eggs: In the same skillet, reduce heat to low and crack the eggs directly into the pan. Add salt and pepper, then use your whisk to scramble them gently until just set but still fluffy, about 2–3 minutes.
- Assemble the quesadilla: Place one tortilla in the skillet, then layer it with crispy bacon pieces, fluffy scrambled eggs, and a generous handful of shredded cheese.
- Top and cook: Place a second tortilla on top and cook until the bottom tortilla is golden brown and the cheese starts to melt, about 3–4 minutes.
- Flip and finish: Carefully flip the quesadilla using your spatula. Cook the other side until it is also golden brown, and the cheese is completely melted, roughly 2–3 minutes more.
- Serve warm: Remove the quesadilla from the skillet and let it cool slightly before slicing into wedges. Serve warm with salsa, guacamole, or sour cream.
Notes
Consider pre-cooking bacon for a quicker breakfast. Customize with additional veggies or spices.
