Description

A delightful Apple Spice Cake that captures the essence of fall with its spiced apple flavor and rich brown sugar icing.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup unsalted butter, melted and cooled
  • 3 large eggs
  • ½ cup buttermilk
  • 2 medium apples, peeled and grated
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp vanilla extract
  • For the icing: ½ cup packed brown sugar, 2 tbsp unsalted butter, 2 tbsp whole milk, 1 cup powdered sugar, ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13-inch baking pan with butter or cooking spray.
  2. Grate the apples using a box grater or food processor and set aside.
  3. Whisk together the flour, cinnamon, nutmeg, cloves, baking soda, and salt in a large mixing bowl.
  4. Beat the melted butter with granulated and brown sugars until creamy. Add each egg one at a time, mixing well.
  5. Mix in the vanilla extract and buttermilk until smooth.
  6. Add the dry ingredients into the wet mixture using a spatula, being careful not to overmix.
  7. Fold in the grated apples until evenly distributed.
  8. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick comes out clean.
  9. Heat brown sugar, butter, and milk in a saucepan until dissolved, then whisk in powdered sugar and vanilla.
  10. Let the cake cool for about 15 minutes before spreading the icing evenly on top.

Notes

Store leftover cake in an airtight container in the fridge for up to a week. Can be frozen for longer storage.
