A delightful Apple Spice Cake that captures the essence of fall with its spiced apple flavor and rich brown sugar icing.

- 2 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 cup unsalted butter, melted and cooled
- 3 large eggs
- ½ cup buttermilk
- 2 medium apples, peeled and grated
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ tsp vanilla extract
- For the icing: ½ cup packed brown sugar, 2 tbsp unsalted butter, 2 tbsp whole milk, 1 cup powdered sugar, ½ tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×13-inch baking pan with butter or cooking spray.
- Grate the apples using a box grater or food processor and set aside.
- Whisk together the flour, cinnamon, nutmeg, cloves, baking soda, and salt in a large mixing bowl.
- Beat the melted butter with granulated and brown sugars until creamy. Add each egg one at a time, mixing well.
- Mix in the vanilla extract and buttermilk until smooth.
- Add the dry ingredients into the wet mixture using a spatula, being careful not to overmix.
- Fold in the grated apples until evenly distributed.
- Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick comes out clean.
- Heat brown sugar, butter, and milk in a saucepan until dissolved, then whisk in powdered sugar and vanilla.
- Let the cake cool for about 15 minutes before spreading the icing evenly on top.
Notes
Store leftover cake in an airtight container in the fridge for up to a week. Can be frozen for longer storage.
