Description

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 large English cucumber, diced
  • 1/4 cup fresh mint leaves, chopped
  • 3/4 cup feta cheese, crumbled
  • 3 tablespoons balsamic glaze
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Combine the watermelon cubes, diced cucumber, and chopped mint leaves in a large mixing bowl.
  2. Drizzle the olive oil, then sprinkle with kosher salt and black pepper. Toss gently to coat.
  3. Sprinkle the crumbled feta cheese on top and lightly toss again.
