- 4 cups seedless watermelon, cubed
- 1 large English cucumber, diced
- 1/4 cup fresh mint leaves, chopped
- 3/4 cup feta cheese, crumbled
- 3 tablespoons balsamic glaze
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- Combine the watermelon cubes, diced cucumber, and chopped mint leaves in a large mixing bowl.
- Drizzle the olive oil, then sprinkle with kosher salt and black pepper. Toss gently to coat.
- Sprinkle the crumbled feta cheese on top and lightly toss again.
- Transfer the salad to a serving platter or large bowl.
