  • 2 ripe avocados, mashed
  • 1/4 cup mayonnaise
  • 2 tablespoons ranch dressing
  • 1 tablespoon fresh lime juice
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 12 slices thick-sliced sourdough bread
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon garlic powder
  • 8 large leaves romaine lettuce
  • 8 thick tomato slices
  • 4 slices red onion
  • 8 pickle spears
  • 8 slices Swiss cheese
  • 4 slices sharp cheddar cheese
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey mustard
  • 1 tablespoon balsamic glaze
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chipotle powder

Instructions

  1. Prepare the chicken: In your mixing bowl, whisk together the olive oil, garlic powder, paprika, Italian seasoning, salt, and black pepper. Pound the chicken breasts to a 3/4-inch thickness and marinate for 15 minutes.
  2. Cook the bacon: In a skillet over medium heat, cook bacon until nearly crisp. Sprinkle with brown sugar, black pepper, and cayenne; cook until crisp. Drain on paper towels.
  3. Grill the chicken: Preheat the grill to medium-high and grill chicken for 6-7 minutes on each side until cooked through. Allow resting before slicing.
  4. Toast the bread: Combine butter and garlic powder, spreading on one side of each sourdough slice. Toast until golden.
  5. Make the avocado ranch spread: Mash avocados and mix with mayonnaise, ranch dressing, lime juice, minced garlic, and salt until smooth.
  6. Assemble the sandwich: Spread avocado ranch on toasted bread and layer with lettuce, tomatoes, chicken, cheeses, and bacon. Top with more avocado ranch and additional ingredients before finishing with another slice of bread.
