Description

A refreshing salad featuring tender rotisserie chicken in a creamy tzatziki dressing with vibrant vegetables.


Ingredients

  • 2 cups shredded rotisserie chicken, skinless
  • 1 cup plain Greek yogurt, full-fat
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 medium cucumber, grated
  • 1/2 small red onion, diced
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup Kalamata or green olives, sliced
  • 1 small avocado, diced
  • Spinach or mixed greens, for serving

Instructions

  1. Prepare the cucumber by grating it finely and squeezing out excess moisture.
  2. Make the tzatziki sauce by combining the grated cucumber, Greek yogurt, dill, lemon juice, garlic, salt, and pepper in a bowl.
  3. Combine the shredded rotisserie chicken with the tzatziki sauce, folding until all pieces are coated.
  4. Add diced red onion, cherry tomatoes, feta cheese, olives, and avocado; mix gently.
  5. Chill the salad for at least 30 minutes before serving to enhance the flavors.
  6. Serve the chilled salad over a bed of spinach or in pita pockets.
