- 2 cups shredded rotisserie chicken, skinless
- 1 cup plain Greek yogurt, full-fat
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1 medium cucumber, grated
- 1/2 small red onion, diced
- Salt, to taste
- Black pepper, to taste
- 1 cup cherry tomatoes, halved
- 1/3 cup feta cheese, crumbled
- 1/4 cup Kalamata or green olives, sliced
- 1 small avocado, diced
- Spinach or mixed greens, for serving
Instructions
- Prepare the cucumber by grating it finely and squeezing out excess moisture.
- Make the tzatziki sauce by combining the grated cucumber, Greek yogurt, dill, lemon juice, garlic, salt, and pepper in a bowl.
- Combine the shredded rotisserie chicken with the tzatziki sauce, folding until all pieces are coated.
- Add diced red onion, cherry tomatoes, feta cheese, olives, and avocado; mix gently.
- Chill the salad for at least 30 minutes before serving to enhance the flavors.
- Serve the chilled salad over a bed of spinach or in pita pockets.
