A refreshing and healthy appetizer featuring cucumbers filled with a creamy tuna and avocado mixture.
Ingredients

- 2 large cucumbers
- 1 ripe avocado, diced
- 1 can (5 oz) tuna in water, drained
- 2 tablespoons red onion, finely chopped
- 1 tablespoon fresh parsley or cilantro, chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon extra virgin olive oil
- 1/2 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- Slice the cucumbers in half lengthwise and use a spoon to scrape out the seeds.
- In a mixing bowl, combine the diced avocado, drained tuna, chopped red onion, and your choice of fresh herbs.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper until emulsified.
- Pour the dressing over the tuna and avocado mixture and gently fold to coat.
- Spoon the filling into the cucumber boats without overfilling.
- Serve immediately at room temperature or chill in the fridge.
Notes
For best results, prepare the filling and cucumber boats separately, then assemble just before serving.
