Description

A refreshing and healthy appetizer featuring cucumbers filled with a creamy tuna and avocado mixture.


Ingredients

  • 2 large cucumbers
  • 1 ripe avocado, diced
  • 1 can (5 oz) tuna in water, drained
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh parsley or cilantro, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Slice the cucumbers in half lengthwise and use a spoon to scrape out the seeds.
  2. In a mixing bowl, combine the diced avocado, drained tuna, chopped red onion, and your choice of fresh herbs.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper until emulsified.
  4. Pour the dressing over the tuna and avocado mixture and gently fold to coat.
  5. Spoon the filling into the cucumber boats without overfilling.
  6. Serve immediately at room temperature or chill in the fridge.

Notes

For best results, prepare the filling and cucumber boats separately, then assemble just before serving.
