A decadent twist on the classic grilled cheese featuring creamy ricotta, sweet-tangy sun-dried tomatoes, and fresh spinach.

- 2 slices of bread
- 1/4 cup ricotta cheese
- 1/4 cup sun-dried tomatoes (chopped)
- 1/2 cup fresh spinach
- 1/2 cup mozzarella cheese (shredded)
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Heat a non-stick skillet over medium heat.
- Spread butter generously on one side of each slice of bread.
- On the unbuttered side of one slice, spread the ricotta cheese thickly.
- Layer the chopped sun-dried tomatoes evenly over the ricotta.
- Add a handful of fresh spinach, followed by a heap of shredded mozzarella.
- Top with the second slice of bread, buttered side facing out.
- Cook your sandwich in the skillet for about 3-4 minutes on each side.
