Description

A decadent twist on the classic grilled cheese featuring creamy ricotta, sweet-tangy sun-dried tomatoes, and fresh spinach.


Ingredients

  • 2 slices of bread
  • 1/4 cup ricotta cheese
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/2 cup fresh spinach
  • 1/2 cup mozzarella cheese (shredded)
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Heat a non-stick skillet over medium heat.
  2. Spread butter generously on one side of each slice of bread.
  3. On the unbuttered side of one slice, spread the ricotta cheese thickly.
  4. Layer the chopped sun-dried tomatoes evenly over the ricotta.
  5. Add a handful of fresh spinach, followed by a heap of shredded mozzarella.
  6. Top with the second slice of bread, buttered side facing out.
  7. Cook your sandwich in the skillet for about 3-4 minutes on each side.
