- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1 cup Greek yogurt
- 1/2 cup vegetable oil or melted butter
- 1 tsp pure vanilla extract
- 1 1/2 cups fresh strawberries, diced
- 2 tbsp flour (for coating strawberries)
- Coarse sugar (for topping)
Instructions
- Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners.
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk the eggs, then add Greek yogurt, vegetable oil, and vanilla extract.
- Toss diced strawberries with 2 tablespoons of flour to coat.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold the flour-coated strawberries into the batter.
- Divide the batter into muffin cups and sprinkle coarse sugar on top.
- Bake for 20-22 minutes or until a toothpick comes out clean.
- Allow muffins to cool for 5 minutes before transferring to a wire rack.
Notes
For a lighter texture, avoid overmixing the batter. You can substitute the strawberries with blueberries or raspberries if desired.
