Description

Deliciously fluffy muffins made with fresh strawberries and Greek yogurt for a moist, flavorful treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup Greek yogurt
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp pure vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • 2 tbsp flour (for coating strawberries)
  • Coarse sugar (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, whisk the eggs, then add Greek yogurt, vegetable oil, and vanilla extract.
  4. Toss diced strawberries with 2 tablespoons of flour to coat.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Fold the flour-coated strawberries into the batter.
  7. Divide the batter into muffin cups and sprinkle coarse sugar on top.
  8. Bake for 20-22 minutes or until a toothpick comes out clean.
  9. Allow muffins to cool for 5 minutes before transferring to a wire rack.

Notes

For a lighter texture, avoid overmixing the batter. You can substitute the strawberries with blueberries or raspberries if desired.
