Deliciously sweet Strawberry Lemon Blondies that combine juicy strawberries and zesty lemon for a perfect summer treat.

- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries, chopped
- Zest of 1 lemon
- 1/4 cup lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- In a large bowl, combine the melted butter, brown sugar, and granulated sugar until smooth.
- Incorporate the eggs one at a time along with the vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chopped strawberries, lemon zest, and lemon juice.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool for 10 minutes before transferring to a wire rack to cool completely. Cut into squares and serve.
Notes
For an extra burst of flavor, sprinkle additional lemon zest on top before baking. Make-ahead tip: Prepare the batter a day in advance.
