Description

Deliciously sweet Strawberry Lemon Blondies that combine juicy strawberries and zesty lemon for a perfect summer treat.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • Zest of 1 lemon
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large bowl, combine the melted butter, brown sugar, and granulated sugar until smooth.
  3. Incorporate the eggs one at a time along with the vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the chopped strawberries, lemon zest, and lemon juice.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Allow to cool for 10 minutes before transferring to a wire rack to cool completely. Cut into squares and serve.

Notes

For an extra burst of flavor, sprinkle additional lemon zest on top before baking. Make-ahead tip: Prepare the batter a day in advance.
