- 3 large eggs (room temperature)
- 1 cup water
- ½ cup vegetable oil
- 1 package (8 ounces) cream cheese (softened to room temperature)
- ½ cup unsalted butter (melted)
- 2 ½ cups confectioners’ sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- 1 cup diced strawberries (plus extra for garnish)
- 2 cups white chocolate chips
- Vanilla ice cream (optional for serving)
Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan.
- Mix the base: In a large bowl, combine the strawberry cake mix, eggs, water, and oil using an electric mixer for about 2 minutes until smooth.
- Bake the cake: Pour the batter into the prepared pan and bake for 30–35 minutes, checking doneness with a toothpick.
- Prepare the cheesecake topping: Beat softened cream cheese and melted butter until smooth, then add confectioners’ sugar, vanilla, and salt.
- Add the goodies: Once baked, top the cake with diced strawberries and white chocolate chips, then spoon dollops of the cream cheese mixture over everything.
- Finish baking for another 15–20 minutes.
- Cool and serve: Let cool for at least 30 minutes before slicing and serving.
