- 1 cup strawberries, diced
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup cream cheese, softened
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup crumb topping (mix of flour, sugar, and butter)
Instructions
- Preheat your oven to 375°F (190°C) and grease your muffin tin.
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine milk, oil, and egg, whisking until smooth.
- Pour wet ingredients into dry ingredients and stir gently.
- Fold in diced strawberries carefully.
- In a separate small bowl, mix crumb topping ingredients until they resemble coarse meal.
- Fill each muffin cup halfway with batter, add a dollop of cream cheese, then fill cups three-quarters full.
- Sprinkle crumb topping over each filled muffin cup.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool in the tin for a few minutes before transferring to a cooling rack.
Notes
Allow muffins to cool properly to maintain texture and avoid sogginess. Can be stored at room temperature for up to three days, or frozen for up to three months.
