Instructions

- Mix in another bowl the buttermilk, egg, and melted butter.
- Combine the wet and dry ingredients, stirring gently until just combined.
- Beat the cream cheese, powdered sugar, and vanilla extract until smooth, then fold in the chopped strawberries.
- Pour batter into the preheated waffle iron, filling it just enough to let the batter spread.
- Cook until golden brown, typically around 4-5 minutes.
- Carefully remove the waffle, cut it open, and fill it generously with the cheesecake mixture.
- Serve immediately with whipped cream on the side.
Notes
For quicker preparation, pre-chop strawberries and mix the filling the night before.
