  • 1/4 cup honey
  • 2 tablespoons rice vinegar

  • 1 tablespoon cornstarch + 2 tablespoons water
  • Sesame seeds for garnish
  • Green onions for garnish
  • Cooked rice or noodles for serving

Instructions

  1. Prepare your chicken: Place the fresh, boneless chicken thighs in the bottom of a slow cooker.
  2. Create the Teriyaki sauce: In a mixing bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and ginger, then pour over the chicken thighs.
  3. Set it to cook: Cover the slow cooker and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  4. Shred the chicken: Remove the chicken from the slow cooker and shred it using two forks.
  5. Thicken the sauce: Combine cornstarch and water, then stir into the remaining sauce and let cook for an additional 15-20 minutes.
  6. Return the chicken: Place the shredded chicken back into the sauce, stirring gently to coat.
  7. Serve and garnish: Spoon the chicken over rice or noodles and garnish with sesame seeds and sliced green onions.
