Description

A comforting one-pot meal with tender chicken cooked in a sweet and tangy honey mustard sauce, perfect for busy weeknights.


Ingredients

  • 4 boneless skinless chicken breasts (1.5 to 2 pounds)
  • 1/2 cup Dijon mustard
  • 1/3 cup honey
  • 2 tablespoons whole grain mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons cornstarch and cold water

Instructions

  1. Trim any excess fat off the chicken breasts and pat them dry with paper towels.
  2. In a medium bowl, whisk together Dijon mustard, honey, whole grain mustard, apple cider vinegar, and Worcestershire sauce until smooth.
  3. Stir in minced garlic, onion powder, paprika, salt, and black pepper; mix well and then whisk in chicken broth.
  4. Layer the chicken in the slow cooker and pour the sauce over the chicken, ensuring each piece is coated.
  5. Cover and cook on low for 4 hours or high for 2 to 2.5 hours until fork-tender.
  6. 15 minutes before serving, transfer the chicken to a plate. Mix cornstarch with cold water to create a slurry, stir into the sauce in the slow cooker, and cook on high until thickened.
  7. Return the chicken to the slow cooker and heat for 2 to 3 minutes before serving.

Notes

Can be prepared ahead by making the sauce the night before. Leftovers can be stored for up to 3 days in the fridge and 3 months in the freezer.
