Description
A comforting one-pot meal with tender chicken cooked in a sweet and tangy honey mustard sauce, perfect for busy weeknights.
Ingredients
Scale
- 4 boneless skinless chicken breasts (1.5 to 2 pounds)
- 1/2 cup Dijon mustard
- 1/3 cup honey
- 2 tablespoons whole grain mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon Worcestershire sauce
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup low-sodium chicken broth
- 2 tablespoons cornstarch and cold water
Instructions
- Trim any excess fat off the chicken breasts and pat them dry with paper towels.
- In a medium bowl, whisk together Dijon mustard, honey, whole grain mustard, apple cider vinegar, and Worcestershire sauce until smooth.
- Stir in minced garlic, onion powder, paprika, salt, and black pepper; mix well and then whisk in chicken broth.
- Layer the chicken in the slow cooker and pour the sauce over the chicken, ensuring each piece is coated.
- Cover and cook on low for 4 hours or high for 2 to 2.5 hours until fork-tender.
- 15 minutes before serving, transfer the chicken to a plate. Mix cornstarch with cold water to create a slurry, stir into the sauce in the slow cooker, and cook on high until thickened.
- Return the chicken to the slow cooker and heat for 2 to 3 minutes before serving.
Notes
Can be prepared ahead by making the sauce the night before. Leftovers can be stored for up to 3 days in the fridge and 3 months in the freezer.
