Description

Delicious quesadillas filled with baby spinach and sharp cheddar cheese, shaped like shamrocks for a festive touch.


Ingredients

  • 8 large flour tortillas, 10-inch
  • 2 cups fresh baby spinach, chopped
  • 2 cups sharp cheddar cheese, grated
  • 1 tablespoon olive oil or melted butter
  • Salt and black pepper to taste
  • Sour cream for serving
  • Salsa or pico de gallo for serving

Instructions

  1. Preheat your large nonstick skillet over medium heat.
  2. Cut shamrock shapes out of each tortilla using a cookie cutter or knife.
  3. Lay half of the shamrock-shaped tortillas on a clean surface.
  4. Sprinkle each with chopped spinach and grated cheddar cheese, then season with salt and pepper.
  5. Top with another shamrock-shaped tortilla and gently press to seal.
  6. Brush tops lightly with olive oil or melted butter.
  7. Cook in the skillet for 2 to 3 minutes per side until golden brown and cheese is melted.
  8. Serve with sour cream and salsa.

Notes

For a healthier option, use whole wheat tortillas or pepper jack cheese for a spicy kick.
