- 8 large flour tortillas, 10-inch
- 2 cups fresh baby spinach, chopped
- 2 cups sharp cheddar cheese, grated
- 1 tablespoon olive oil or melted butter
- Salt and black pepper to taste
- Sour cream for serving
- Salsa or pico de gallo for serving
Instructions
- Preheat your large nonstick skillet over medium heat.
- Cut shamrock shapes out of each tortilla using a cookie cutter or knife.
- Lay half of the shamrock-shaped tortillas on a clean surface.
- Sprinkle each with chopped spinach and grated cheddar cheese, then season with salt and pepper.
- Top with another shamrock-shaped tortilla and gently press to seal.
- Brush tops lightly with olive oil or melted butter.
- Cook in the skillet for 2 to 3 minutes per side until golden brown and cheese is melted.
- Serve with sour cream and salsa.
Notes
For a healthier option, use whole wheat tortillas or pepper jack cheese for a spicy kick.
