Description

Delicious cupcakes inspired by the iconic Shamrock Shake, featuring a fluffy vanilla cake with mint frosting and festive decorations.

Ingredients

Scale
  • 1 box of white cake mix
  • 3 large eggs
  • 1 cup of milk
  • 1/2 cup of vegetable oil
  • 1 teaspoon of mint extract
  • Green food coloring (to preference)
  • 1 cup of unsalted butter (softened)
  • 4 cups of powdered sugar
  • 23 tablespoons of milk (for frosting)
  • 1 teaspoon of vanilla extract
  • Crushed mint candies (for garnish, optional)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line a cupcake pan with colorful cupcake liners.
  2. Mix the batter: In a large mixing bowl, combine the cake mix, eggs, milk, vegetable oil, and mint extract. Add a few drops of green food coloring and mix until smooth.
  3. Fill the cupcake liners: Gently pour the batter into the prepared cupcake liners, filling each about two-thirds full.
  4. Bake to perfection: Place the filled cupcake pan in the oven and bake for 15-18 minutes.
  5. Cool down: Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack.
  6. Prepare the mint frosting: In a large mixing bowl, beat the softened butter until creamy, then gradually add the powdered sugar, milk, and vanilla extract until smooth.
  7. Frost your treats: Once the cupcakes are cool, pipe the mint frosting on top of each one.
  8. Garnish and serve: If desired, sprinkle crushed mint candies on top for a delightful crunch.

Notes

These cupcakes can be made a day in advance and frosted before serving. Consider using an air fryer for smaller batches.
