Description

A rich and savory breakfast that brings together fluffy scrambled eggs, crispy sausage, fresh veggies, and cheese in a warm tortilla.


Ingredients

  • 4 large tortillas
  • 6 large eggs
  • 1 cup cheddar cheese, shredded
  • 1 cup cooked sausage or bacon, chopped
  • 1 cup fresh veggies (diced bell peppers, onions, spinach, tomatoes)
  • 1/2 cup sour cream
  • Hot sauce, to taste

Instructions

  1. Whisk the eggs in a mixing bowl, seasoning with salt and pepper.
  2. Cook the eggs in a preheated non-stick skillet over medium heat, stirring gently for 3-4 minutes until fluffy.
  3. Sauté the sausage or bacon in the same skillet for 5-7 minutes until crispy.
  4. On a tortilla, layer scrambled eggs, sausage or bacon, cheese, veggies, and sour cream, adding hot sauce if desired.
  5. Fold the tortilla towards the center to create a compact wrap.
  6. Cook the wrap seam-side down in the skillet over medium heat for 3-4 minutes until golden and crispy, then flip and cook the other side.
