- 4 large tortillas
- 6 large eggs
- 1 cup cheddar cheese, shredded
- 1 cup cooked sausage or bacon, chopped
- 1 cup fresh veggies (diced bell peppers, onions, spinach, tomatoes)
- 1/2 cup sour cream
- Hot sauce, to taste
Instructions
- Whisk the eggs in a mixing bowl, seasoning with salt and pepper.
- Cook the eggs in a preheated non-stick skillet over medium heat, stirring gently for 3-4 minutes until fluffy.
- Sauté the sausage or bacon in the same skillet for 5-7 minutes until crispy.
- On a tortilla, layer scrambled eggs, sausage or bacon, cheese, veggies, and sour cream, adding hot sauce if desired.
- Fold the tortilla towards the center to create a compact wrap.
- Cook the wrap seam-side down in the skillet over medium heat for 3-4 minutes until golden and crispy, then flip and cook the other side.
