- 1/2 cup breadcrumbs

- 2 tablespoons olive oil

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, finely chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and dried thyme. Mix until just combined.
- Scoop out small portions of the meat mixture, shaping them into 1-inch meatballs. Place them on a baking sheet lined with parchment paper. Bake for 20 minutes, or until browned and cooked through.
- Heat olive oil in a large skillet over medium heat. Add the sliced onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in beef broth and Worcestershire sauce, bringing to a simmer. Slowly whisk in the cornstarch slurry, allowing the gravy to thicken. Adjust seasoning with salt and pepper.
- In a separate pot, place chopped potatoes and minced garlic. Cover with water and boil until fork-tender, 15-20 minutes.
- Drain potatoes and garlic, return to the pot. Add milk, butter, salt, black pepper, and fresh parsley. Mash until smooth.
- Add the cooked meatballs into the skillet with gravy, gently tossing to coat.
- Serve with a scoop of garlic herb mashed potatoes and extra gravy on top.
Notes
Meatballs can be made a day in advance and refrigerated. For gluten-free options, substitute with gluten-free breadcrumbs.
