Ingredients

  • 8 ounces cream cheese, softened

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the baking pan by lining an 8×8-inch pan with parchment paper.
  3. Mix the melted butter and granulated sugar in a large mixing bowl until smooth. Add in the eggs, vanilla extract, and red food coloring, and mix until incorporated.
  4. Incorporate the sifted flour, cocoa powder, and salt into the wet mixture, folding gently to avoid overmixing.
  5. Reserve 1/4 cup of the brownie batter in a separate container.
  6. Spread the remaining brownie batter into the prepared pan evenly.
  7. Prepare the cheesecake layer by beating the softened cream cheese in a separate bowl until smooth. Add sugar, egg, and vanilla extract, mixing until creamy.
  8. Layer the cream cheese mixture over the brownie layer.
  9. Add spoonfuls of the reserved brownie batter on top and swirl gently with a knife.
  10. Bake for about 35 minutes, or until the center is set.
  11. Cool completely and refrigerate for at least 2 hours before slicing.
