Description

Ingredients

  • 4 thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for sauce)
  • Salt & pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Season chicken cutlets generously with salt and pepper.
  2. Set up a dredging station with flour, beaten eggs, and breadcrumbs mixed with grated Parmesan.
  3. Dredge each cutlet in flour, dip in egg, and coat in breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat and pan-fry the cutlets for 3-4 minutes on each side until golden brown.
  5. Remove and keep chicken warm, then melt butter in the same skillet, adding minced garlic and sautéing until fragrant.
  6. Stir in chicken broth, heavy cream, and additional Parmesan, simmering until the sauce thickens.
  7. Return chicken to skillet, coating with sauce and garnish with parsley or thyme.
  8. Serve with sides like garlic mashed potatoes or roasted vegetables.

Notes

Make-ahead by preparing and breading chicken cutlets a few hours prior. For lighter versions, use air fryer or alternative cream.
