- 2 large eggs, beaten
- 1 cup breadcrumbs

- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Season chicken cutlets generously with salt and pepper.
- Set up a dredging station with flour, beaten eggs, and breadcrumbs mixed with grated Parmesan.
- Dredge each cutlet in flour, dip in egg, and coat in breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and pan-fry the cutlets for 3-4 minutes on each side until golden brown.
- Remove and keep chicken warm, then melt butter in the same skillet, adding minced garlic and sautéing until fragrant.
- Stir in chicken broth, heavy cream, and additional Parmesan, simmering until the sauce thickens.
- Return chicken to skillet, coating with sauce and garnish with parsley or thyme.
- Serve with sides like garlic mashed potatoes or roasted vegetables.
Notes
Make-ahead by preparing and breading chicken cutlets a few hours prior. For lighter versions, use air fryer or alternative cream.
