  • 1 cup couscous
  • 1.5 cups low-sodium chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 0.5 teaspoon dried thyme
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Prep the chicken: Pat the chicken thighs dry with paper towels and season both sides.
  2. Sear the chicken: Heat olive oil in a large deep skillet and sear the chicken thighs for 3 to 4 minutes on each side.
  3. Create the sauce: Add butter to the same skillet and stir in minced garlic, cooking until fragrant.
