- 1 cup Heavy Cream
- 1 cup Whole Milk
- 1 pound White Fish (Haddock, Cod, or Halibut)
- 2 medium Potatoes, diced
- 2 cloves Garlic, minced
- 1 medium Onion, diced
- 1 pound Shrimp
- 1 pound Scallops
- 1 pound Mussels
- 1 cup White Wine (optional)
- 4 cups Seafood Stock
- 2 sprigs Aromatic Herbs (Thyme, Bay Leaf)
Instructions
- Melt 1 tablespoon of butter in a large pot over medium heat until it shimmers.
- Add the diced onions and minced garlic, sautéing for about 4-5 minutes until translucent and fragrant.
- Stir in the diced potatoes, cooking for approximately 5-7 minutes until they start to soften.
- Pour in the seafood stock, raising the heat to bring to a gentle simmer. Cook uncovered for about 10-12 minutes until the potatoes are fork-tender.
- Lower the heat, then add the heavy cream and whole milk. Stir gently until smooth and heated through.
- Carefully add the white fish, shrimp, scallops, and mussels. Cook for another 5-7 minutes until the seafood is fully cooked and tender.
- Stir in fresh thyme and a bay leaf, seasoning with salt and pepper to taste. Heat through for an additional 2-3 minutes.
Notes
For best flavor, allow the chowder to sit for a few minutes after cooking. Can be made a day in advance to enhance flavors.
