- 7 ounces graham crackers, finely crushed (about 1.5 cups crumbs)
- 4 tablespoons unsalted butter, melted
- 7 ounces white chocolate chips or chopped white chocolate
- 1 can (14 ounces) sweetened condensed milk
- 1.75 ounces freeze-dried strawberries, ground to fine powder (or 3.5 ounces fresh strawberries, puréed and strained)
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 1–2 drops pink or red gel food coloring (optional)
- Fresh strawberry slices for garnish
- Extra freeze-dried strawberry pieces or coarse sugar crystals for decoration
Instructions
- Prepare the baking pan by lining an 8-inch square baking pan with parchment paper.
- Make the crust: In a large bowl, combine the graham cracker crumbs and melted butter, then press into the bottom of the pan and refrigerate for 10 minutes.
- Melt the white chocolate: Mix white chocolate chips and sweetened condensed milk in a heatproof bowl over simmering water until smooth.
- Flavor the fudge: Stir in the freeze-dried strawberry powder, vanilla extract, and salt. Mix in food coloring if desired.
- Add the fudge layer: Pour the mixture over the chilled crust and spread evenly.
- Chill: Refrigerate for 2-3 hours until firm.
- Slice and serve: Lift the fudge from the pan using the parchment overhang, slice into 16 squares, and garnish as desired.
Notes
These fudge squares can be prepared a day in advance and stored in the refrigerator. Customize the flavors by using different freeze-dried fruits or adding nuts.
