- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 8 oz cream cheese, softened
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
- Prep the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well coated.
- Press the mixture firmly into the bottom of your pan to form a sturdy crust.
- Make the peanut butter mousse: In a large mixing bowl, beat together the peanut butter, powdered sugar, cream cheese, and 1 cup of heavy cream until smooth and fluffy.
- Spread the peanut butter mixture evenly over the cooled crust.
- Prepare the ganache: Heat 1/2 cup of heavy cream in a small saucepan until just about to boil. Remove from heat and stir in the chocolate chips until melted.
- Pour the ganache over the peanut butter mousse layer and spread it out evenly.
- Chill in the refrigerator for at least 240 minutes or until set.
- Slice into squares and serve cold, garnished with whipped cream or chocolate shavings if desired.
Notes
For best results, chill your mixing bowl before whipping the cream and press the crust firmly. You can add toppings like whipped cream or chocolate shavings for extra flair.
