Ingredients
- Lasagna Noodles
- Mushrooms (button, cremini, or portobello)
- Ricotta Cheese
- Mozzarella Cheese (low-moisture)
- Parmesan Cheese (freshly grated)
- Marinara Sauce
- Olive Oil
- Garlic (minced)
- Onion (finely chopped)
- Salt
- Pepper
- Fresh or dried basil
- Fresh or dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the noodles in a large pot of salted boiling water according to package instructions until al dente, then drain and set aside.
- Sauté the onions and garlic in olive oil over medium heat until softened.
- Add the sliced mushrooms and cook until golden brown.
- Prepare the ricotta mixture by combining ricotta cheese, salt, pepper, basil, and oregano in a mixing bowl.
- Layer the lasagna by spreading marinara sauce in a baking dish, followed by noodles, ricotta mixture, sautéed mushrooms, and mozzarella. Repeat layers and finish with marinara, mozzarella, and Parmesan.
- Bake covered with foil for 25 minutes.
- Remove the foil and bake for an additional 15 minutes until the cheese is golden.
- Cool for 5-10 minutes before slicing and serving.
