- 9 lasagna noodles
- 2 cups mushrooms, sliced
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 3 cups marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles in a large pot of salted water until al dente, then drain.
- Sauté the mushrooms in a skillet with olive oil, garlic, salt, pepper, and Italian seasoning for about 5-7 minutes.
- Layer marinara sauce at the bottom of the baking dish, then add noodles, half of the mushrooms, ricotta cheese, and a sprinkle of mozzarella and Parmesan. Repeat layers finishing with noodles and marinara.
- Bake covered with foil for 25 minutes, then remove foil and bake for an additional 15 minutes to brown the cheese.
- Let the lasagna rest for 10 minutes before slicing, then garnish with fresh basil.

Make-ahead: Assemble a day in advance and refrigerate. Consider air frying for a crispy crust.
