- 6 cups fresh spinach, roughly chopped
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh basil or parsley, chopped
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 4 large flour tortillas (8 to 10 inches)
- 1 tablespoon olive oil or unsalted butter for cooking
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds.
- Stir in chopped spinach and cook until just wilted, about 2 to 3 minutes. Season with salt and pepper. Press out excess moisture from the spinach using a colander.
- In a mixing bowl, combine feta cheese, mozzarella cheese, sliced red onion, oregano, and the drained spinach. Mix thoroughly.
- Lay a tortilla flat, spread one-quarter of the filling over half, and fold the tortilla. Repeat for remaining tortillas.
- Wipe the skillet, return to medium heat, and add a bit of olive oil. Cook each quesadilla for 2 to 3 minutes per side until golden and crispy.
- Slice into wedges and serve warm with garnishes if desired.
Notes
You can customize by adding other vegetables or using whole wheat tortillas. Make-ahead options for the filling are available for quick meals later.
