Description

A delightful fusion of Mediterranean flavors, these quesadillas combine sautéed spinach, creamy feta, and gooey mozzarella for a satisfying meal that feels both hearty and light.


Ingredients

  • 6 cups fresh spinach, roughly chopped
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil or parsley, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 4 large flour tortillas (8 to 10 inches)
  • 1 tablespoon olive oil or unsalted butter for cooking
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds.
  2. Stir in chopped spinach and cook until just wilted, about 2 to 3 minutes. Season with salt and pepper. Press out excess moisture from the spinach using a colander.
  3. In a mixing bowl, combine feta cheese, mozzarella cheese, sliced red onion, oregano, and the drained spinach. Mix thoroughly.
  4. Lay a tortilla flat, spread one-quarter of the filling over half, and fold the tortilla. Repeat for remaining tortillas.
  5. Wipe the skillet, return to medium heat, and add a bit of olive oil. Cook each quesadilla for 2 to 3 minutes per side until golden and crispy.
  6. Slice into wedges and serve warm with garnishes if desired.

Notes

You can customize by adding other vegetables or using whole wheat tortillas. Make-ahead options for the filling are available for quick meals later.
