A nostalgic and hearty meatloaf recipe that’s easy to prepare and perfect for family gatherings.

- 2 lbs ground beef (85% or 80% lean)
- 1 medium onion (1 cup), finely chopped
- 1 tsp olive oil
- 2 large eggs
- 3 garlic cloves, minced
- 2 Tbsp ketchup
- 3 Tbsp fresh parsley, finely chopped
- 3/4 cup Panko breadcrumbs
- 1/3 cup milk
- 1 tsp salt (or to taste)
- 1 tsp Italian seasoning
- 1/2 tsp ground black pepper
- 3/4 cup ketchup, for glaze
- 1 ½ tsp white vinegar
- 2 Tbsp brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions
- Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or foil.
- In a medium skillet, heat 1 tsp of olive oil over medium heat. Add the chopped onion and sauté until softened and golden, about 5-7 minutes.
- In a large mixing bowl, combine all meatloaf ingredients, including the sautéed onions, and mix gently by hand.
- Transfer the meat mixture onto the prepared baking sheet and shape it into a loaf.
- Bake uncovered for 40 minutes at 350°F.
- In a small bowl, mix ketchup, vinegar, brown sugar, garlic powder, and onion powder to create the glaze.
- Spread the glaze over the meatloaf and return to the oven for an additional 20 minutes, or until the internal temperature reaches 160°F.
- Allow the meatloaf to rest for 10-15 minutes before slicing.
Notes
For a lighter option, substitute ground beef with turkey or chicken. Feel free to experiment with seasonings or add vegetables.
