Description

A nostalgic and hearty meatloaf recipe that’s easy to prepare and perfect for family gatherings.


Ingredients

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion (1 cup), finely chopped
  • 1 tsp olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 Tbsp ketchup
  • 3 Tbsp fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper
  • 3/4 cup ketchup, for glaze
  • 1 ½ tsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or foil.
  2. In a medium skillet, heat 1 tsp of olive oil over medium heat. Add the chopped onion and sauté until softened and golden, about 5-7 minutes.
  3. In a large mixing bowl, combine all meatloaf ingredients, including the sautéed onions, and mix gently by hand.
  4. Transfer the meat mixture onto the prepared baking sheet and shape it into a loaf.
  5. Bake uncovered for 40 minutes at 350°F.
  6. In a small bowl, mix ketchup, vinegar, brown sugar, garlic powder, and onion powder to create the glaze.
  7. Spread the glaze over the meatloaf and return to the oven for an additional 20 minutes, or until the internal temperature reaches 160°F.
  8. Allow the meatloaf to rest for 10-15 minutes before slicing.

Notes

For a lighter option, substitute ground beef with turkey or chicken. Feel free to experiment with seasonings or add vegetables.
