Description

A refreshing and colorful mango slaw with a delightful mix of fresh veggies and a zesty dressing, perfect for summer meals.


Ingredients

  • 2 ripe mangoes, julienned
  • 1 cup red cabbage, thinly sliced
  • 1 cup carrots, grated
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the julienned mango, thinly sliced red cabbage, grated carrots, chopped red bell pepper, sliced green onions, and chopped cilantro.
  2. In a separate bowl, whisk together the fresh lime juice and honey (or maple syrup), adding salt and pepper.
  3. Pour the dressing over the slaw mixture and toss until well-coated.
  4. Allow the slaw to sit for about 10 minutes before serving.
  5. Serve as a refreshing side dish or topping for grilled foods.

Notes

Prep the veggies a day in advance, but add the dressing just before serving to keep everything crisp. Optionally add nuts or chili flakes for extra texture and flavor.
