Description

Deliciously comforting wraps filled with tender shredded chicken, gooey cheeses, and roasted garlic, all wrapped in low-carb tortillas.


Ingredients

  • 2 cups cooked chicken breast (shredded)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic (minced)
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper (to taste)
  • 1 handful baby spinach (optional)

Instructions

  1. Preheat your skillet over medium heat and drizzle in olive oil.
  2. Soften your tortillas by microwaving them for 10-15 seconds covered with a damp paper towel.
  3. In a large mixing bowl, combine shredded chicken, mozzarella, cheddar, cream cheese, minced garlic, parsley, salt, and pepper. If using spinach, fold it in now.
  4. Divide the mixture evenly among the tortillas and roll tightly, tucking in the sides.
  5. Place the wraps seam-side down in the skillet and cook undisturbed for 2-3 minutes per side, until golden brown and the cheese oozes.
  6. Remove from skillet, slice in half diagonally, and serve hot garnished with extra parsley.
