- 14 oz firm tofu, drained and pressed
- 3 tablespoons olive oil
- 1 large lemon, zest and juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the pressed tofu into cubes (about 1 inch each) and place in a mixing bowl.
- Create the marinade by whisking together olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, paprika, and seasoning with salt and pepper.
- Pour the marinade over the tofu cubes and gently toss until evenly coated.
- Spread the marinated tofu in a single layer on a lined baking sheet.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crisp.
- Garnish with fresh chopped parsley before serving.
Notes
For more flavor, marinate the tofu for an hour or overnight. Best served warm with quinoa or roasted vegetables.
