Description

A delicious and versatile dish featuring marinated tofu baked to golden perfection, bursting with zesty lemon and aromatic herbs.


Ingredients

  • 14 oz firm tofu, drained and pressed
  • 3 tablespoons olive oil
  • 1 large lemon, zest and juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the pressed tofu into cubes (about 1 inch each) and place in a mixing bowl.
  3. Create the marinade by whisking together olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, paprika, and seasoning with salt and pepper.
  4. Pour the marinade over the tofu cubes and gently toss until evenly coated.
  5. Spread the marinated tofu in a single layer on a lined baking sheet.
  6. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crisp.
  7. Garnish with fresh chopped parsley before serving.

Notes

For more flavor, marinate the tofu for an hour or overnight. Best served warm with quinoa or roasted vegetables.
