Description

Ingredients

  • 4 salmon fillets
  • 2 tablespoons unsalted butter
  • 1 lemon, juice and zest
  • 2 cups baby potatoes
  • 2 cups broccoli florets
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss halved potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. Roast potatoes for approximately 20 minutes until golden brown.
  4. Melt butter in a skillet over medium heat and add lemon juice and zest.
  5. Add salmon fillets to the skillet, skin-side down. Cook for 5-7 minutes.
  6. Gently flip the salmon and cook for an additional 5-7 minutes until flaky.
  7. Add broccoli to the baking sheet in the last 5 minutes of cooking time for the potatoes.
  8. Serve salmon alongside crispy potatoes and broccoli, drizzling with remaining lemon butter.
