- 1 lemon, juice and zest
- 2 cups baby potatoes
- 2 cups broccoli florets

Instructions
- Preheat your oven to 400°F (200°C).
- Toss halved potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet.
- Roast potatoes for approximately 20 minutes until golden brown.
- Melt butter in a skillet over medium heat and add lemon juice and zest.
- Add salmon fillets to the skillet, skin-side down. Cook for 5-7 minutes.
- Gently flip the salmon and cook for an additional 5-7 minutes until flaky.
- Add broccoli to the baking sheet in the last 5 minutes of cooking time for the potatoes.
- Serve salmon alongside crispy potatoes and broccoli, drizzling with remaining lemon butter.
