- 1 lb large shrimp, peeled and deveined
- 4 medium zucchini, spiralized into noodles
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp lemon juice
- 4 tbsp unsalted butter
- 5 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Pat the shrimp dry with paper towels and season with salt and pepper.
- Melt 2 tbsp of butter in a skillet over medium-high heat and sauté the shrimp for 2-3 minutes on each side until pink.
- Remove the shrimp from the skillet and set aside.
- Add remaining butter and minced garlic to the skillet, sautéing for 30 seconds.
- Stir in crushed red pepper flakes and lemon juice.
- Add the zucchini noodles and cook for 2-3 minutes until tender.
- Return the shrimp to the skillet and mix well for another minute.
- Garnish with parsley and Parmesan, then serve immediately.
Notes
Avoid overcooking shrimp for the best texture. Use fresh zucchini for crunch and avoid soggy noodles.
