- 1 cup light brown sugar
- 0.5 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon baking powder
- 1 large egg
- 0.5 cup unsalted butter
- 1 cup freshly grated carrots
- 4 ounces cream cheese (softened)
- 1 large egg yolk
- 0.5 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a mixing bowl, blend the softened cream cheese, egg yolk, and granulated sugar until creamy. Set aside.
- In another bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt.
- Beat the light brown sugar and unsalted butter until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, mixing until combined.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the grated carrots.
- Pour ⅔ of the carrot cake batter into the baking pan and spread evenly.
- Dollop the cream cheese filling over the batter and gently marble it.
- Top with remaining batter and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool before slicing into squares.
Notes
Allow all ingredients to reach room temperature before starting. For a healthier twist, substitute sugar with maple syrup or use whole wheat flour.
