Description

Delicious carrot cake bars with a creamy cream cheese swirl, perfect for gatherings or a cozy treat.


Ingredients

  • 1 cup light brown sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a mixing bowl, blend the softened cream cheese, egg yolk, and granulated sugar until creamy. Set aside.
  3. In another bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt.
  4. Beat the light brown sugar and unsalted butter until light and fluffy.
  5. Add the egg and vanilla extract to the butter mixture, mixing until combined.
  6. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  7. Fold in the grated carrots.
  8. Pour ⅔ of the carrot cake batter into the baking pan and spread evenly.
  9. Dollop the cream cheese filling over the batter and gently marble it.
  10. Top with remaining batter and bake for 30-35 minutes or until a toothpick comes out clean.
  11. Allow to cool before slicing into squares.

Notes

Allow all ingredients to reach room temperature before starting. For a healthier twist, substitute sugar with maple syrup or use whole wheat flour.
