- ¾ cup Dutch-process cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ¼ cups granulated sugar
- 2 large eggs
- 1 teaspoon high-quality vanilla extract
- 1 cup buttermilk
- ½ cup vegetable oil
- ¼ cup maraschino cherry juice
- 1 cup cola
- 1 cup chopped dark chocolate
- 1 batch whipped cherry frosting
- Maraschino cherries and shaved dark chocolate for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round baking pans.
- Mix the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Cream the sugar and eggs in another bowl until light and fluffy, then add vanilla extract.
- Combine the dry ingredients with the sugar and egg mixture, adding buttermilk and vegetable oil followed by cherry juice and cola.
- Fold in the chopped dark chocolate gently.
- Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool the cakes in the pans for 15 minutes before transferring to cooling racks.
- Prepare the whipped cherry frosting while the cakes cool.
- Assemble the cake by layering frosting between cake layers and frosting the outside, garnishing with cherries and chocolate.
- Serve and enjoy the cake with friends and family.
Notes
