Description

Ingredients

  • ¾ cup Dutch-process cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon high-quality vanilla extract
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • ¼ cup maraschino cherry juice
  • 1 cup cola
  • 1 cup chopped dark chocolate
  • 1 batch whipped cherry frosting
  • Maraschino cherries and shaved dark chocolate for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. Mix the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Cream the sugar and eggs in another bowl until light and fluffy, then add vanilla extract.
  4. Combine the dry ingredients with the sugar and egg mixture, adding buttermilk and vegetable oil followed by cherry juice and cola.
  5. Fold in the chopped dark chocolate gently.
  6. Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool the cakes in the pans for 15 minutes before transferring to cooling racks.
  8. Prepare the whipped cherry frosting while the cakes cool.
  9. Assemble the cake by layering frosting between cake layers and frosting the outside, garnishing with cherries and chocolate.
