- 1 box of vanilla cake mix
- 1 cup of water
- 1/3 cup of vegetable oil
- 3 large eggs
- 1 (8 oz) package of cream cheese, softened
- 1 cup of powdered sugar
- 1 (8 oz) container of whipped topping
- 2 cups of mixed fruit (like strawberries, pineapple, and peaches)
- 1/2 cup of chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a rectangular baking dish.
- In a large bowl, combine the vanilla cake mix, water, vegetable oil, and eggs. Beat until smooth, about 2 minutes.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean. Let cool completely.
- In another bowl, beat the softened cream cheese until smooth, then gradually add the powdered sugar until well combined.
- Fold in the whipped topping until just blended.
- Spread the cream cheese mixture evenly over the cooled cake.
- Top with mixed fruit and chopped nuts.
- Refrigerate for at least 2 hours before serving.
Notes
For a make-ahead option, bake the cake a day in advance and add the topping just before serving.
