Description

Delightful quesadillas packed with vibrant veggies and melty cheese, perfect for quick meals or special occasions.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella or provolone cheese
  • ½ cup crumbled feta cheese
  • 1 small zucchini, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp sun-dried tomatoes, chopped
  • 2 tbsp Kalamata olives, sliced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh spinach or arugula for extra greens

Instructions

  1. Preheat your skillet or grill pan over medium heat.
  2. Toss the zucchini, bell pepper, and onion in a mixing bowl with olive oil, salt, pepper, and oregano.
  3. Sauté for about 3–4 minutes until they soften.
  4. Place one tortilla in the skillet, sprinkle half of the mozzarella over it.
  5. Layer on the sautéed veggies, sun-dried tomatoes, Kalamata olives, and crumbled feta.
  6. Sprinkle the remaining mozzarella over the filling and top with another tortilla.
  7. Cook for 2–3 minutes per side, gently pressing down with a spatula.
  8. Remove from skillet, slice into wedges, and serve warm.

Notes

For extra flavor, pair with salsa or guacamole. Experiment with different veggies and cheeses as desired.
