Ingredients

- 4 large flour tortillas
- 1 cup shredded mozzarella or provolone cheese
- ½ cup crumbled feta cheese
- 1 small zucchini, thinly sliced
- 1 small red bell pepper, thinly sliced
- ½ small red onion, thinly sliced
- 1 tbsp olive oil
- 2 tbsp sun-dried tomatoes, chopped
- 2 tbsp Kalamata olives, sliced
- 1 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- Optional: fresh spinach or arugula for extra greens
Instructions
- Preheat your skillet or grill pan over medium heat.
- Toss the zucchini, bell pepper, and onion in a mixing bowl with olive oil, salt, pepper, and oregano.
- Sauté for about 3–4 minutes until they soften.
- Place one tortilla in the skillet, sprinkle half of the mozzarella over it.
- Layer on the sautéed veggies, sun-dried tomatoes, Kalamata olives, and crumbled feta.
- Sprinkle the remaining mozzarella over the filling and top with another tortilla.
- Cook for 2–3 minutes per side, gently pressing down with a spatula.
- Remove from skillet, slice into wedges, and serve warm.
Notes
For extra flavor, pair with salsa or guacamole. Experiment with different veggies and cheeses as desired.
