Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup Greek yogurt (2% plain)
- ¼ cup milk (or water)
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter (or oil)
Instructions
- In a small bowl, whisk together the flour, sugar, baking powder, and salt.
- In a medium bowl, combine the Greek yogurt, milk, eggs, vanilla extract, and melted butter.
- Gradually fold the dry ingredients into the wet mix until just combined, leaving lumps in the batter.
- Preheat a nonstick pan over medium heat, greasing lightly with oil or butter.
- Pour approximately ¼ cup of batter onto the pan, cooking until edges dry and bubbles form, about 2 minutes.
- Flip and cook for an additional 1-2 minutes until golden brown.
- Repeat until all batter is cooked, regreasing the pan as necessary.
Notes
Serve warm with butter and maple syrup, or add your favorite toppings like fresh berries or nut butter.
