- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 2 tablespoons olive oil
- 2 lemons (juiced and zested)
- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Sear the chicken by heating olive oil in a skillet over medium heat, seasoning with salt, pepper, and oregano. Cook for 6-7 minutes on each side.
- Remove and set the chicken aside on a plate to keep warm.
- Sauté the minced garlic in the same skillet for about 30 seconds until fragrant.
- Add the chicken broth, lemon juice, and zest. Bring to a boil.
- Stir in the orzo pasta and return the chicken to the skillet.
- Cover and simmer for 10-12 minutes until orzo is cooked and chicken is done.
- Garnish with freshly chopped parsley before serving.
Notes
For added flavor, marinate chicken in lemon juice and olive oil for a few hours or overnight. Check chicken doneness with a meat thermometer (165°F).
