Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Sear the chicken by heating olive oil in a skillet over medium heat, seasoning with salt, pepper, and oregano. Cook for 6-7 minutes on each side.
  2. Remove and set the chicken aside on a plate to keep warm.
  3. Sauté the minced garlic in the same skillet for about 30 seconds until fragrant.
  4. Add the chicken broth, lemon juice, and zest. Bring to a boil.
  5. Stir in the orzo pasta and return the chicken to the skillet.
  6. Cover and simmer for 10-12 minutes until orzo is cooked and chicken is done.
  7. Garnish with freshly chopped parsley before serving.

Notes

For added flavor, marinate chicken in lemon juice and olive oil for a few hours or overnight. Check chicken doneness with a meat thermometer (165°F).
