- 1 pound grilled chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 2 cups fresh spinach or mixed greens
- 1/4 cup fresh parsley, chopped
- 1 cup Greek yogurt (for tzatziki)
- 1 cucumber (shredded and drained, for tzatziki)
- 2 cloves garlic (minced, for tzatziki)
- 1 tablespoon olive oil (for tzatziki)
- 1 tablespoon lemon juice (for tzatziki)
- Salt and pepper to taste (for tzatziki)
Instructions
- In a bowl, combine Greek yogurt, shredded cucumber, minced garlic, olive oil, lemon juice, salt, and pepper. Mix thoroughly and refrigerate for at least 30 minutes for the flavors to develop.
- In a large serving bowl, start with your cooked quinoa or rice as the foundation.
- Top with your grilled chicken, placing it atop the warm quinoa or rice. Scatter cherry tomatoes, cucumber, red onion, bell pepper, and crumble feta cheese over the top.
- Add fresh spinach or mixed greens on top of the vibrant vegetables. Finish with freshly chopped parsley.
- Serve the bowl with a generous dollop of tzatziki sauce.
- Enjoy immediately or store in meal prep containers for later.
