- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and add the steak bites in a single layer.
- Sear the steak for 1-2 minutes on each side until browned. Remove from skillet.
- In the same skillet, melt the butter and add minced garlic. Cook for 30 seconds until fragrant.
- Add the zucchini and sauté for 3-5 minutes until tender-crisp.
- Return the steak bites to the skillet, tossing everything together and cook for an additional 1-2 minutes until heated through.
- Garnish with chopped parsley and serve immediately.
Notes
Consider marinating the steak ahead of time for extra flavor. This dish can also be adapted with other vegetables or cooking methods.
