- 1.5 pounds Beef stew meat (Cut into bite-sized pieces)
- 1 pound Baby potatoes (Halved for even cooking)
- 4 tablespoons Unsalted butter (Melted)
- 3 cloves Garlic (Minced)
- 1 teaspoon Onion powder
- 1 teaspoon Smoked paprika
- 0.5 teaspoon Dried thyme
- 0.5 teaspoon Dried rosemary
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper
- 0.25 cup Beef broth
- 1 tablespoon Olive oil
Instructions
- Start by gathering all your ingredients. Cut the beef into bite-sized pieces and halve the baby potatoes.
- If you prefer a creamier potato, parboil them for about 5 minutes until they’re slightly tender.
- Heat the olive oil in a skillet over medium-high heat. Add the beef bites and sear until browned on all sides.
- In a small bowl, mix the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
- Place the halved potatoes in the slow cooker, followed by the seared beef. Pour the garlic butter sauce over the top and add the beef broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
- Let the dish rest for about 10 minutes before serving.
Notes
For a quicker version, you can use an Instant Pot for about 30 minutes at high pressure.
