  • 1 pound Baby potatoes (Halved for even cooking)
  • 4 tablespoons Unsalted butter (Melted)
  • 3 cloves Garlic (Minced)
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Start by gathering all your ingredients. Cut the beef into bite-sized pieces and halve the baby potatoes.
  2. If you prefer a creamier potato, parboil them for about 5 minutes until they’re slightly tender.
  3. Heat the olive oil in a skillet over medium-high heat. Add the beef bites and sear until browned on all sides.
  4. In a small bowl, mix the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
  5. Place the halved potatoes in the slow cooker, followed by the seared beef. Pour the garlic butter sauce over the top and add the beef broth.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  7. Let the dish rest for about 10 minutes before serving.

Notes

For a quicker version, you can use an Instant Pot for about 30 minutes at high pressure.
