Description

Delicious buttery sugar cookie cups filled with strawberry jam and topped with fluffy buttercream frosting.


Ingredients

  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for frosting)
  • Food coloring (pink, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Cream the softened butter and granulated sugar until fluffy.
  3. Add the vanilla extract and mix well.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry mixture to the butter mixture until just combined.
  6. Press the dough firmly into the muffin tin, shaping it into cups and creating a well in the center.
  7. Bake for 10-12 minutes or until lightly golden.
  8. Cool the cookie cups completely in the tin.
  9. Whip together the frosting ingredients until fluffy.
  10. Fill each cookie cup with strawberry jam.
  11. Top with a swirl of buttercream frosting.
