- 1/2 cup strawberry jam
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 tablespoons heavy cream or milk
- 1 teaspoon vanilla extract (for frosting)
- Food coloring (pink, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Cream the softened butter and granulated sugar until fluffy.
- Add the vanilla extract and mix well.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the butter mixture until just combined.
- Press the dough firmly into the muffin tin, shaping it into cups and creating a well in the center.
- Bake for 10-12 minutes or until lightly golden.
- Cool the cookie cups completely in the tin.
- Whip together the frosting ingredients until fluffy.
- Fill each cookie cup with strawberry jam.
- Top with a swirl of buttercream frosting.
